A group of friends dedicated to raising money for the Canadian Cancer Society has compiled a new cookbook that serves up a collection of favourite family recipes and provides a little nourishment for the soul.

The Fightin? Fillies Cookbook includes more than 275 delicious recipes as well as inspiring and heartfelt messages from cancer patients, family members, medical staff and volunteers collected in a journal cancer survivor Christina Handley brought with her to the hospital during her own treatments.

The cookbook is the latest fundraising venture from the Fightin? Fillies, a team consisting of Handley and friends, who in 2011 raised more than $ 20,000 in their first Relay for Life in the City of Kawartha Lakes, held to raise money and support for the Canadian Cancer Society. The Fillies set a record for most money raised by a team in the history of the Kawartha Lakes event and they continue to raise money and awareness for the fight against cancer.

The Fillies came together after Christina, a photographer and horse lover, was diagnosed with a rare form of gynecological cancer in 2010. After successfully undergoing treatment, she wanted to give back to help other cancer patients/survivors and asked her closest friends to help her. The Fillies? mascot is Reba, a Belgian mare owned by Christina that succumbed to cancer in 2009 and is pictured on the back cover of the cookbook.

?The idea for a cookbook came from an episode of Dragon?s Den. I was inspired by a group of ladies called ?Breast Friends? who appeared on the TV show and had raised more than $ 1 million from the sale of their cookbook for the fight against breast cancer,? Christina says. ?I?m hoping we can raise several thousand dollars with the Fightin? Fillies cookbook, which is in its second printing. I am still very passionate about giving back and paying it forward in order to help others fighting this terrible disease, The Big C. We need to support others and help work towards a cure.?

The Fightin? Fillies Cookbook includes recipes for everything from pickles and relishes to main dishes, soups, salads, desserts and more. The recipes are personal favourites of the Fillies, their families and friends. The cookbooks, which are spiral bound to make it easy to open to a recipe of choice, sell for $ 15 (plus $ 5 shipping) with net profits going to the Canadian Cancer Society.

In addition to the cookbook, the Fightin? Fillies have also launched a downloadable charity gift package containing digital photo and Photoshop tips from professional photographers available for sale online in bundles ranging from $ 25 to $ 100.

?Five members of the Fightin’ Fillies team are professional photographers,? explains Christina. ?In addition to those photographers, we also asked some of our other favorite photographer friends and colleagues to contribute a tutorial on the things they each do best.?

The Fillies are gearing up for their second Relay for Life on June 8, 2012 in the City of Kawartha Lakes. Here in Southern California, Mexican food is as common as burgers and fries. But for a really authentic Mexican restaurant, head to Olvera Street in Downtown Los Angeles. Today we are making Chicken Tortilla Soup. Now let’s get started on this easy tortilla soup recipe. If you have leftover chicken or leftover turkey making mexican tortilla soup is a great way to use up your leftovers for a second meal. After roasting a chicken (and eating most of it), I’ve still got plenty of great meat I can peel off. Make sure you only get the meat. You don’t want any chicken fat, which does not have much flavor. Cut into bite size pieces. You’ll want roughly 2 cups of diced chicken. After I dice up the cooked chicken it’s time to get the rest of the ingredients together.
